Pumpkin Spice Muffins

Oh, I know, pumpkin spice, blah, blah, blah… Well, tis the season.

I found this quick and simple little jewel on pinterest. Here is the low down: It just doesn’t get much easier than a box of spice cake mix and a 15 oz can of pumpkin puree, mixed and baked in muffin tin at 350 for about 20 minutes. However, if you keep the following (very simple) tips in mind, you will enjoy an even more successful batch of muffins.  Add two eggs, and mix the cake mix and pumpkin with a handheld mixer. (Told you it was simple!) Make sure it’s mixed really well. At this point, you could also fold in chopped nuts if you like them.  I think the strong mixing and of course, the eggs, make the muffins less dense and more fluffy. All in all, it’s a nice fall treat, and something to do with the pumpkin puree you are bound to have on hand this season.
