Easy Banana Bread

Easy – check.  Few ingredients – check.  This is fast, it’s easy, and easy to add/change ingredients to make it your own. Oh, and makes for an easy Christmas gift.

4 bananas (a little on the brown side)

1 yellow cake mix, although you could totally use chocolate or devils food and make it chocolate banana!

about a half cup of chopped nuts or you could add chocolate chips, or nothing at all!

2 eggs



Preheat the oven to 350.  Grease 2 or 3 small loaf pans, or one large one.

Mash the bananas!  My lovely assistant took care of this job easily.

*We were making sugar cookies and biscuits at the same time on the this particular day, that’s why the flour is out and there is a pile of it on the table! We used a potato masher to mash the bananas and then used a hand mixer to mix the other ingredients.*

Add the eggs and cake mix, mix well. Then if you decide to add nuts or chips, mix them into the batter. Pour into loaf pan(s). Bake about 30 minutes, or if you are using a large loaf pan, it will need to bake at least an hour.
