Easy Breakfast (or Lunch) Chocolate Chip Pumpkin Muffins

Our busy lives sometimes make the most important meal of the day a challenge. But, it doesn’t have to be! I found this recipe while browsing one of my favorite blogs.

It doesn’t get much easier than three ingredients: A can of pumpkin, a box of supermoist chocolate cake mix and chocolate chips. Yep, that’s it. Easy.

3 ingredient chocolate chip pumpkin muffins


You can probably guess what to do at this point, but just in case, all you do is 1) mix the pumpkin with the dry chocolate mix. **(I used Betty Crocker Supermoist and I can tell you it was better than “the other mix”.  It was a very slight difference, but a very noticeable difference, indeed.)  2) Mix in some chocolate chips. There is no rhyme or reason, just take a handful or two and slowly mix them into the pumpkin & cake mixture. Make sure it is good and mixed up and… 3) Put the mixture into a well greased muffin pan and sprinkle a few more chocolate chips on top just for good measure. Pop the mixture in a 350 degree oven for about 20 minutes.


A sneaky way to get your kids to eat pumpkin for breakfast. or lunch. or a snack.

**These muffins bake to be quite big. My children only eat one per sitting. I put the rest in the freezer and use them for their lunches during the week.
